bacony goodness
Lately I’ve felt the urge to cook. I think the spark was lit a few weeks ago when mom sent me the link to homemade pop tarts. Since then the BrownEyedBaker is one of the blogs I stop by a couple times a week to see what she’s making. Her recipes are easy to follow and her pictures are divine. I think it’s the photos that really sell the recipes. I made a quiche a couple weeks ago that turned out yummy. Mom made the cream of mushroom soup which is really a barefoot contessa recipe but she has it on her blog as well.
She posted her Pancake Cupcakes with Maple-Bacon Buttercream frosting sounded interesting and the idea festered in me until today when I finally gave in and gave it a try. I was curious how bacon would be with the sweetness of the frosting. The cake itself is literally just a pancake so that’s not too sweet. The frosting is pure sugary goodness and the saltyness of the bacon is what makes everything work together. It gives everything a pop and intensifies the maple flavor. They are very very rich though. I recommend only one, although Chris didn’t seem like he would have any issues with taking down a couple.

This is so awesome. Voodoo donuts has a maple/bacon donut that I didn’t try. I’m thinking I should have now!
